Meet Our Head Chef: Jack's Culinary Journey from Thailand to Darlington
Originating from the vibrant heart of Thailand, our head chef Jack brings an extraordinary culinary journey to the tables of Banrai Thai. Following his national service, Jack found his true calling in a bustling 5-star kitchen in Bangkok. There, he began to hone his chef skills, setting a firm foundation for his future.
Embracing the diversity of world cuisines, Jack then broadened his horizon, weaving a rich tapestry of culinary experiences in Germany, Spain, and other parts of Thailand over the next decade. His gastronomic adventure led him to the UK in 2001, where he joined the Blackwell Ox team. Jack’s innovative approach to Thai cuisine and his mastery of flavor led to a swift promotion to Head Chef within just a year. There, Jack successfully expanded the Thai menu, garnering widespread acclaim for his authentic and inventive dishes.
After dedicating 19 fruitful years to the Blackwell Ox, Jack decided it was time for a new challenge. He teamed up with his partner Apple to launch their very own Thai restaurant in Wetherby, further spreading his passion for Thai cuisine.
Today, Jack is thrilled to embark on a new chapter with his brother Jay, business partner Yo, and the rest of the team at our new location in Darlington. Drawing from their diverse experiences from various regions of Thailand, the team promises to deliver a symphony of authentic and delectable Thai dishes to our guests.
